Pumpkin overload? Nah, just love

This weekends I really got into the fall,pumpkin mode. It may still be mid 90s, sunny, and humid here in New Orleans, but it is mid September and I love pumpkin! Update- yogurtland gets pumpkin pie froyo next Monday! Can’t wait, I already have a date with a friend 🙂
Other pumpkin happenings have been these amazing pumpkin pie almonds from The Fresh Market, I have to cut myself off sometimes, I eat a bag in two days!
I made my first pumpkin pie smoothie. It was really good!

Pumpkin pie smoothie:

  • 1/3 cup pumpkin puree
  • 1 scoop pumpkin spice protein powder (or vanilla)
  • 1/2 cup silk milk
  • 1/2 tsp cinnamon
  • ice (as desired)

Mix all together in a blender and enjoy 🙂

Next up, because I had opened my can of pumpkin purée I made some pumpkin chia yogurt/pudding that I’ve been eating for breakfast this week. Into the mix went: 1/2 cup pumpkin puree, 1/4 cup plain kefir, 1/4 cup silk milk, 1/2 scoop protein powder, 2 tbsp chia seeds, tbsp cocoa nibs. Mix it all together in a container and refrigerate. I ate it in two servings, plus added a couple spoonfuls to my greek yogurt one morning 🙂

And lastly I made some pumpkin pie muffins! I made mini muffins because they are so cute 🙂 they really taste like pumpkin pie on the inside because I did not use flour. I loveee up pumpkin pie so these were a win for me!

Side note: I do eat atleast 3 real meals a day it just tends to be that 2/3 are usually on the go, like today it was an Amy’s burrito in the car on the way back from my run and breakfast was eaten during class this morning 🙂 I do get the good stuff at least!
