WIAW #13 & puppy chow trail mix

Hello and welcome to another WIAW post, hopefully everyone is surviving this first post holiday full week or enjoying a last week of break for some college students. I know I am living up this last week of break before heading back to the school grind on Sunday. My last week at home eating until the summer! So here is a look at What I Ate Wednesday on Tuesday plus the delicious puppy chow I’ve now made twice in four days and have been snacking on after dinner/dessert when I want something crunchy. So here is What I Ate!

Breakfast:

1. pre gym pumpkin protein muffin  2.post gym pumpkin oatmeal  3. lots of blueberries  4. plain greek yogurt with chocolate eas protein and kashi granola

Lunch:

Whole Foods Lunch with a friend from high school- I pretty much got a little bit of everything! Including a bed of mixed greens, cauliflower, tofu meatloaf, vegan chicken strips, roasted sweet potatoes, falafel, kabocha and an edamame and quinoa salad
Snack:

Greek Yogurt Pretzel Bites- finished off the bag, good but not great, I was a little disappointed in them

Dinner:

Sweet Potato, black bean and shrimp enchiladas, roasted brussel sprouts, cauliflower and peppers with cajun spice and spaghetti squash

Some homemade puppy chow and peppermint hot cocoa trail mix from Target- that stuff is good! I used my old rudolph trail mix container to store the puppy chow after I made it too

Puppy Chow Trail Mix: (also called Muddy Buddies)

  • 2.5 cups rice Chex
  • 1/2 cup unsalted peanuts
  • 1/2 cup almonds
  • 1/3 cup chocolate chips
  • 1/3 cup peanut butter
  • 1 cup powdered sugar

Directions: 1. In a large bowl melt the chocolate chips and peanut butter for 45 seconds.
2. Add Rice chex to bowl and mix.
3. Add peanuts and almonds and pretzels to bowl and continue to mix until coated.
4. Once everything is fully coated in chocolate transfer to a large clean bowl, add powdered sugar, and stir until everything is coated. You can also put it all in a brown bag and shake it up.

Let me tell you, that stuff is good! I love crunchy and chocolatey snacks so it is right up my alley. I could eat the entire batch in one sitting if it wouldn’t make me sick… doesn’t stop me from eating a bit too much anyways, until my stomach starts making funny noises that is. With the store bought version there is a ton of more added ingredients for shelf life and even for the recipe online they add butter to the mix… if you ask me that is not necessary at all!     1. I did not, but they are good! I have a weird thing with numbers, they kinda stick in my head so just from baking all the time I was throwing ingredients into a bowl without looking at a recipe and added what I wanted
