Hey there! How is your Sunday going so far? I work every sunday 12-5 so it is a pretty busy day for me! Thankfully we did our grocery shopping and meal planning yesterday!
Breakfast: Overnight oats, yogurt parfaits, protein pancakes
Lunch: smoothies, eggs, baked sweet potatoes, leftovers- random assortment of all of the things listed 🙂
Snacks: bars, nuts, enlightened crisps, rice cakes and nut butter
- Tortilla crusted cod with roasted asparagus and rice
- Shrimp stir fry with leftover rice
- Sweet potato gnocchi
- spagetti squash with meatless ground beef
- lentil sweet potato stew
Dessert: enlightened ice cream bars, brownies, caramel corn
So that is about it for our meal planning. We have a ton of non-perishable things we need to work through before we move in 7 weeks so we are mostly only buying fresh stuff each week from now on. This week we went to Trader Joe’s and Target to get everything. I didn’t get around to food prepping though but most of our meals shouldn’t take too long.
