What I Ate Wednesday #70

Hey there! I cannot believe I have done 70 of these! Wow. They are my favorite day of the week though 🙂 maybe I am just nosy but I like to see what everyone is eating!  I do not think I am alone in that either!

Lunch:  Smoothie in a bowl! Kale, blueberries, strawberries, plain kefir, cashew milk, pb2 with granola, coconut, pumpkin seeds, and some extra peanut butter protein powder + zucchini bread with almond butter.

Snack: Chocolate Salted Caramel Luna protein bar! So good! I saw these come out a few weeks ago but didn’t want to buy a whole box before trying one (aka Target only had boxes) but then I was at Giant this weekend and saw them sold individually! (I ate it before the picture, ops)

So that is what my Monday looked like this week! A pretty typical day in my life 🙂 I love my smoothies now that is it warm out and since I didn’t get it for breakfast I really craved it for lunch! The zucchini bread I was eating is from Fresh Market too and it is soooo good, I only buy it occasionally!

Chocolate Plantain Pancakes

What a great way to start a Monday! Pancakes!

Just because I choose for pancakes to go instead of the waffles or french toast doesn’t mean I don’t still eat and enjoy them. I make them the most often actually because I don’t have a waffle maker and we usually freeze our bread so french toast would take a while to make…. either way I have a pancake recipe for you today!

What is not to love about chocolate and plantains?? Nothing in my book because I eat a lot of both of those. I have seven five (baked two last night) plantains in my kitchen right now that will be ripe this week and ready to eat. I love plantains and I hope you do too.

Chocolate Plantain Pancakes: 

Ingredients:

  • 1 large ripe plantain
  • 2 eggs
  • 1 scoop protein powder (chocolate/unflavored or vanilla)
  • 1 T coconut flour
  • 1 T cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp nunaturals cocoa syrup (or other sweetener)
  • optional add ins: chocolate chips, coconut, nuts, etc

Directions:

  1. Peel plantain and blend it up in a blender then pour into a bowl.
  2. Add protein powder, coconut flour, cocoa powder vanilla extact and cocoa syrup or sweetener to bowl and mix together.
  3. Add chocolate chips, nuts, coconut etc. if you want to the batter.
  4. Heat a nonstick skillet, spray if necessary, pour batter onto hot skillet in the size pancake desired. Flip once the top starts to bubble and bottom is golden (2-4 min).
  5. Repeat until all of batter is gone and you have some delicious pancakes ready to eat!
  6. Serve with maple syrup and any other desired toppings.

What I Ate Wednesday #62

Happy hump day?? hah I never really got excited by Wednesday because in the morning you still have 3 FULL days left and then by night you still have 2 full days. When I was still taking college classes I had the worst Tu/Th most semesters so I just got excited by the end of Thursday since that is usually when my weekend started.

Now that I read and write in the blog world though I ALWAYS look forward to Wednesdays. It is the best, I look forward too (probably a little too much) reading about what others are up too and eating! Aren’t we all a little curious as to what others are putting in their mouths? What fad diet they are following or not following, what new health food product did they buy into and does it actually taste as good as it claims?

I find it funny when someone people (many) review a product and claim it to be awesome, amazing, tasty, just like x/y/z flavor or treat and then never eats it in the daily or weekly eats. I have won quite a few things in my days via other blog giveaways, which I am thankful for because free food and products are awesome, (but) that are just plain nasty. Like hmmm, what did you really think about this product? did you really like it ? or just wanted to please someone?

I won something recently that Shane wanted to try and he was drinking/eating (I don’t want to say what it was because I only won it) and he looks at me and asks “do I have to finish this?” I laughed and said no, because he knows I hate wasting stuff but it was not good.

So anyways, that little rant was not planned but I find it very true, let me know if that has happened to you? It is just so disappointing when someone raves about something to be awesome and then you get it, after entering 1000009 times (or as many as your allowed too) and actually win, and it turns out to be horrible so that you don’t want it anymore. #FAIL

Well I am here to recap some food I LOVE, I eat very similar things a lot because I love certain flavors and would never lie about how things taste so here is what I enjoyed yesterday!

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Snack (Pre gym): Coffee, plantains with almond butter, dark chocolate espresso beans

Breakfast (post gym): Random smoothie- 1/2 Plantain, 1/2 sweet potato, 1 tsp vanilla, 1/2 suja protein drink (super yummy), cinnamon blended together then I mixed in quinoa/barley and topped with some granola and blueberries plus 1 slice marathon bread with chocolate almond butter and chocolate chips folded into a sandwich

Lunch:  butternut squash soup with veggies and carrots with hummus

Snack(s): Target Cashew caramel trail mix/ pita chips and guac / an extra cup of coffee 🙂

Dinner:  spinach lasagna, pinto beans/onions, and sauteed veggies (zucchini, peppers, and tomatoes) and my other 1/2 sweet potato eaten separately with coconut butter and tahini

Dessert: Cinnamon Roll Ice Cream with Kashi cinnamon crunch granola and broken pb cups plus pretzels and coconut dark chocolate almond butter (because I was still hungry)

So there you have it! Basically what I ate yesterday. Minus a dark chocolate kiss or two 🙂 So I hope you enjoyed reading about what I ate, it was all yummy. Have a great Wednesday, but don’t get too excited about the weekend yet because there is still 2-3 more days depending on when you read this!

Thinking out Loud: Valentine’s

Hey there, how are you doing? I am a bit tired but otherwise doing well. Today I am getting a mini facial (for free) as a Valentine’s Day event at L’occtaine . Not a bad deal, free is the way to go. I also had a chiropractor appointment this morning since I have been getting a lot of headaches, especially late afternoon after staring at the computer for a few hours thanks to working on that excel file for my dad. He also told me he had another document for me to work on when I finish this one… joy. :/

A little rant too- I also have to call the sender of my package I was not able to pick up (missed the fedex guy twice, he didn’t ring the door bell the last attempt when I was actually home, went to the wrong location to pick it up because the lady on the phone told me I could get it– not actually true, called again yesterday and now I have to call the sender and have them allow for it to be moved to another location for me to pick it up…. grrrrr! I had a wristlet from Louis Vuitton repaired and paid $15 for them to ship it and now it is a nightmare!!! The guy on the phone last night just kept repeating the same thing, you need to call the sender we cannot move your package, over and over again, like they are now holding it hostage in their warehouse! I am so angry, I just wait my wristlet back! It broke a month after I got it! BTW I am never personally choosing to use Fedex, their customer service is awful and the delivery guy was at fault!

Anyways, Today I wanted to talk about my Valentine’s Day plans and the day in general. So I am doing this TOL style and linking up with Amanda! I think we can all TOL on this topic!

Thinking-Out-Loud2

I know some people HATE the day and some love it, but really what is the point, it is never going to disappear. I think everyone should just accept it for what it is. I am in between, it is a Hallmark holiday, nothing more than that, but what is bad about taking some extra time to show someone you care. One could argue you should do this everyday, but we live in a world where that does not always happen we are extra busy blah blah blah… So this is an excuse to make plans to just be with the one you want to be with. No extravagant gifts should be needed, just spent time with someone. Clear your schedule or do something they like and not complain.

So my plans? I am going to spend it with the two most important people in my life! My mom and Shane. Nothing over the top lovey dovey just doing fun stuff. We are doing our own morning workouts then heading in DC for he afternoon. There is a Dino exhibit and a Whole Foods sponsored: Our Global Kitchen- chocolate themed food thing at the National Geographic Museum. Then we will head to Chevy chase and visit my cousin who had her second baby 3 weeks ago and stop into the Tiffany & Co store so my mom can get a bracelet she wants. Treat your self, right?! She deserves it and is using her tax return.

Going to two exhibits and then to Chevy Chase will take up most of the afternoon so from there we are just heading back to Annapolis and home for dinner. Going out would be crazy so our plan is to do dinner out on Sunday instead. I did pick up some strawberries and we have pretzels and to melt and cover both in chocolate. Classic valentine’s dessert.

Shane said as my Valentine’s ‘present’ is that I can pick sushi and froyo for a night 🙂 perfect, right? For him I got some gummy candies from Fresh Market (he loves gummies), I stuck out on finding taffy, which he also loves, and then on Friday I am getting him these heart shaped Chick Fil A chicken biscuits. He LOVES Chick Fil A so I thought it would be funny. We like food can you tell? plus it isn’t a real gift holiday in my opinion.

So, what are your thoughts on Valentine’s day?? I do not get why so people absolutely hate it, like whyyy? Isn’t there someone you love and just wanna tell them because you can?

I am not all about the over the top, Valentine’s day is a legitimate holiday (sorry when it happens on a week day we all have to go to work or school) but I have a little fun and make cards to tell people that  I care  and make yummy baked goods and eat chocolate! Who wants to turn down an excuse to eat more chocolate! I probably eat enough chocolate daily for a family of four 🙂

A Love/Hate Relationship

Hey there, interesting title right? Curious as to what I am referring too? Don’t we all have MANY love/hate relationships? They can be so great but also not so great. I decided to tell y’all about this love/hate relationship today instead of the usual Friday favorites. Today I am talking about The Fresh Market. Yes, a grocery store. I have proclaimed how much I love it and their foods before. The sushi is my favorite grocery store sushi (maybe tied with Wegmans) but really I have just started to notice how not so great this store is FOR ME. Why? Because when I go by myself/spending my own money I don’t go there to buy fresh fruit/veggies/proteins… the reason I got is to buy CANDY and BAKED GOODS. Yes, only reason. Maybe occasionally at school I ended up with some kabocha or plantains because other stores didn’t have them at the time but usually it was bulk bin candy and trail mix. Yupp, I said it. I go to Fresh Market to only buy JUNK.

Now, I went last week to buy groceries but I was spending my moms money and was going specifically for a Thursday meal deal for $20 and then bought some other stuff on sale like yogurt and plantains. But never a full stock up trip because that store isn’t cheap. It would be treat to buy stuff there but during school I was going weekly to buy nothing I needed, nothing that nourished my body, or filled me up. It was after dinner snacks of candy. That is why it is a love/hate relationship. Yes, I love the store, I love candy/chocolate/trail mix – they really do have the best ones. But it is also a hate relationship because it is not cheap and it is not good for you. So what am I going to do about it? I am going to start limiting myself to only buying these treats when my mom wants to go for something there for dinner or a sale. Probably once a month. Also, limit myself to 1/2 bag of whatever I choose because buying a $12-15 bag that lasts 2-3 days is ridiculous. That is over a pound of junk in a very short amount of time. I should know this by now but once I start eating that addicting sugar stuff I can’t stop! I eat it until I have a stomach ache! … not good. So if I buy less I won’t over eat it as much and have less stomach aches and if I limit myself hopefully I will want to savor it more.

My family knows me as the sugar junkie and it is true! I have a terrible sweet tooth. I eat very healthy but also eat A LOT of chocolate. I was never a fan of other junk foods like chips, soda, fried foods… just chocolate. So that is my love/hate rant about The Fresh Market. It really does have the world’s BEST trail mix selection but just be aware that it may draw you in and get you buying $15 worth of trail mix every week or every other week and giving you a stomach ache because it is so good you can’t stop eating! Not something I can afford right now, at least not as often as I used to go! Treats are meant to be just that, a treat not a daily/weekly occurrence or a habit. I like my froyo and have managed to get those serving sizes more in control! So Fresh Market chocolate/trail mix/baked goods…this isn’t good buy just see you later and not as much. Note: I had a major realization of how much this stuff affects me is because i majorly cut back on sweets/sugar after finals and once I started consuming them again my stomach aches got REALLY bad and frequent and my UC started to come back. I see my doctor next week and will talk with her about this. I do not believe my digestion is ready for so much inflammatory/irritating foods and working on that is my number one concern right now. I graduated early so that I could have more time/cut out stress sooner and really work to fix all the damage my digestion has taken over the last two years. I hope everyone liked my honesty about my weakness and can relate in some ways. We are all human, no one is perfect and each have to have a fault or weakness, right? I love sweets, I have no mental/restrictive problems with wanting to cut out sugar or limit myself, I have just noticed a major trend and binging because its so good and damaging my digestion is not healthy. I think most people have that weakness item/food that takes away all self control and those trail mixes are definitely mine! Now that I have admitted it, it is time to take control of them! (and take control of my health because I felt so much better eating less sugar/processed junk) Anyone else love those bulk bins? //eat ALL the trail mix they buy in 1-2 sitting when intending it to last a week??

On the Bright Side & My Weekend

So I’ve been a little MIA but with good reason. 1. I have been really sick- not with a cold but with GI issues that are making my stomach hurt terribly and my energy levels are non-existant 2. I left for Thanksgiving break on Friday and am HOME! wooo!

Being home is just what I needed right now, though I do wish I didn’t feel so bad I’d rather feel bad at home than at school. I do have classes Monday and Tuesday but some were cancelled and I talked to the teachers of the others and I won’t miss too much; I got all my work done that needed to be handed in last week. It really made the most sense considering how I’ve been feeling and how expensive flights are this week. I landed Friday night, delayed by an hour unfortunately, and my mom and Shane picked me up and we headed straight to the movies to see Catching Fire. Since we were running late Shane and I went into Wegmans and picked up sushi to eat for dinner and my mom got us seats. I thought the movie was really good, sets up perfectly for the 3rd one, but Shane wasn’t a big fan- there wasn’t enough fighting in it for him and there was too much romance. hah. 

Saturday morning I woke up and went to the gym with my mom, while Shane slept. Around noon we headed out to do errands and grocery shopping. That involved Michaels, Target, Whole foods for lunch (soup and sweet potatoes for me and my stomach), Sam’s Club, and Trader Joe’s. We needed a ton of groceries. There wasn’t much in the house for Shane and I and we needed more Pumpkin Greek Yogurt from Trader Joe’s, soooo good! When we got home Shane watched football while my mom and I started to work on dinner to take over to our friend Ron’s house. We made pesto salmon, pork chops for the boys, and quinoa ‘fried rice’ stuffed in peppers. Ron also picked up some ginger cookies and chocolate covered pistachios from The Fresh Market. Everything was really good but my stomach still wasn’t too happy with more complicated foods.

Sunday morning I went to the gym again and tried my first Barre class with my mom. I know it is really popular but I was just not a fan. I can’t do core work right now because of my stomach and a bunch of the moves hurt my hip so I won’t be going to anymore classes. Shane had caught a cold somehow this weekend and I was just exhausted after not sleeping much at night so we have a very lazy day. We ate breakfast when we got home and then got back under a couple of blankets with the fire place going and watched movies all day. First was White House Down and then Monsters University. Midway through we took a lunch break but I wasn’t feeling too hot so I only had pretzels and peanut butter and some blueberries. I had to take him back to school at 5:15 and my mom went out on a date so I watched an episode of gossip girl when I got home and then made an egg sandwich for dinner. It was really good too! I had GF wheat bread with vegan cream cheese, some leftover salmon, a bit of lettuce, and scrambled eggs. I put it all together and chowed down. I liked it so much I ate the same thing for lunch today! (and it didn’t upset my stomach tooo much) When my mom got home she made a big salad since they had chicken wings while watching football and we put on Dante’s Peak- a movie we hadn’t seen in awhile but is pretty good! Finally onto today! I was able to sleep in a bit, until 8:50 am. I hung around this morning and didn’t go to the gym until 10 am. I had some cinnamon chex before going and came home to make my great egg sandwich again for lunch! I then had a chiropractor appt at 1:45 and more errands to run after that included: the bank, sam’s club for gas, the mall for my Godiva truffle of the month and some free vs panties, and then the Great Harvest to pick up a loaf of bread. I also made a quick stop at Whole Foods for sushi (I’ve really been craving it lately) for dinner. At the Great Harvest I picked up a loaf of Pumpkin Swirl Wheat for pumpkin french toast on Thursday morning. They gave me a whole slice to try before buying it and it was good; I ate a couple bites there but then brought the rest of the slice home and toasted it and put vegan cream cheese on it… good decision! I also got a call from CVS that a prescription was ready so I headed there before going home. I talked to my doctor this morning and since I’m still not feeling better she put me on prednisone to hopefully kick this!

I finally made it back to yoga tonight too. I’m really glad I went. After getting adjusted today it was nice to get a good stretch in and really relaxing. Now since my mom was in Ohio today I am alone for dinner and just hanging out in my room (so nice to say!) She won’t be back until 10 pm tonight. I am already pretty tired so I will call it a night pretty early. 

Onto the bright side of my title… I know this is a LONG post, sorry. With my stomach being in so much pain and my food intake being limited there is one positive I have found. Before all this, even with my flare up but before the stomach pain, I was indulging into my sweet tooth wayyyy too often. Like after halloween I would eat 5ish (give or take) pieces of candy throughout the day then get froyo and maybe eat some more chocolate from the Fresh Market later at night. Plus I put chocolate chips in everything: my yogurt, my cereal, my trail mix, my bars… I also had a bunch of covered pretzels for the holidays- like pumpkin and gingerbread and yogurt covered. I was just eating wayy too much candy and chocolate. So I have finally kicked the craving for the last two weeks I have been much more modest about my sugar intake. I knew I needed to cut back but chocolate is just so comforting it was hard. I no longer find myself craving it at 10 am and then allllll day long; yes I still eat it almost every day but more like once a day maybe twice. With my UC and nutritional deficiencies right now I have found myself craving egg sandwiches, sushi, greek yogurt, silk milk and other healthy foods in order to fill the gaps… even if they don’t sit well. 

My final note is that hopefully this more intense steroidal medicine will help me feel better and fast. I haven’t had coffee is 7 days now since caffine makes it worse and I really miss that. But hopefully my sweet tooth is a little tamed now and I will continue to keep it in check through the holidays. If your still with me I hope you are doing better than I am and Happy Thanksgiving!

Chocolate Cherry Overnight Oats

Last night I made one of my best yet overnight oat recipes! I just started throwing things together and put it in the fridge for the night and it was such an easy grab and go breakfast this morning. I have been seriously loving my overnight oats this summer and this one is a keeper!

Chocolate Cherry Overnight Oats:

  • 1/3 cup oats
  • 1/3 tsp cinnamon
  • 1/2 tsp ground chia seeds
  • 1 tsp chocolate protein powder
  • 1/2 tsp coconut butter
  • 1 tbsp peanut butter/nut butter (any kind works)
  • 1 tsp mini chocolate chips
  • 1/4 cup greek yogurt
  • 1/4 cup Siggs drinkable yogurt
  • splash of soy milk (or any kind)
  • 5-10 deseeded and cut up cherries

Directions: put together dry ingredients, add greek yogurt, milk/drinkable yogurt, and stir together. Add the fruit last and put into the fridge for the night. Enjoy in the morning or when cold.

I know I used a lot of ingredients but I wanted to cover all the health corners and I love putting my overnight oats together!
