What I Ate Wednesday: Celiac Awareness Month

Hello there. My week has been pretty good so far. I am enjoying my last few days at home before summer school begins.We have been keeping busy too this week. Traffic around town is awful though! Due to Naval Academy graduation on Friday and gorgeous weather. By the way- I had a blast at Ring Dance but i’ll tell you about that later!

So this week as part of Celiac Awareness month (and working on FODMAPs) I have joined in with Rebecca at Strength and Sunshine in her Gluten Free Challenge. Now this isn’t a full recap but I am sharing some of my gluten free eats from the week. I don’t usually eat all that much gluten but it is added into so many other foods that you would never think about.

Gluten free day:

Pre gym snack: triple chocolate energy balls

Post gym breakfast: fruit & kefir bowl with whey crunchies, gf granola, chocolate chips, and pb2, overnight oats with plantains, gf granola, and chocolate chips

Lunch: kale sautéed in coconut oil, roasted tomatoes, eggs with peppers, onions and beets, and salmon

Snack: trail mix (unpictured) & almond butter with chocolate chips

Dinner: salad with peppers, onions, salmon, beets, sweet potatoes, salmon, boy choy and quinoa/brown rice blend

Dessert: dark chocolate covered nuts (unpictured) & coffee ice cream with whey crunchies, gf granola, and chocolate chips

Now that is a day… mostly 🙂 but I don’t want to leave out all the other good stuff!
