What I Ate Wednesday #71

Hey there! So I missed the last two days and I am getting this typed up pretty late too! I had plans to call it an early night but forgot about WIAW and a long list of other things I need/want to do before I leave! Ahhhh. I feel so behind.

I am on my way to New Orleans or in NOLA by the time you are reading this! CRAZY. Lots of plans and a busy week ahead of me! So lets cut to the chase and look at what I ate yesterday.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Pre gym: trail mix & coffee – wasn’t too hungry this morning so I just threw together a small snack bag of trail mix (with chocolate espresso beans, of course) and headed out the door.

Post Gym: 1/2 detour bar & another coffee (Free coffee all month at Panera!) – I had a chiro appt so I wanted to eat something since I went to Bodypump and I still had 1/2 of this in my bag.

Breakfast: BIG banana/blueberry PB smoothie (that is pb2 on top, plus I added some granola halfway through) with Kale and plantains with chocolate coconut cashew butter

Lunch: Baked Sweet Potato with almond butter, granola, chocolate chips. Lots of trail mix. Lots of blueberries. Some of the Salad I made for the family I nanny for dinner. Yes all super random but my breakfast was late because of my chiro appt and then I had work and was driving the kids all the way across town and then I had to make them dinner soooo it happens!

Sooooo basically my eats, in my eyes, yesterday were AWESOME! Haha. So I am glad a got them up ๐Ÿ™‚ I hope you enjoyed checking them out too.

I have one more picture to share with you. Incase you wanted to laugh at me- I had a pinterest cake fail this weekend. I wanted to make Shane a Banana Pudding Poke Cake. Butttt I didn’t want to just make a sheet style cake; I decided to make a two layer circle cake but unfortunately it didn’t turn out as great as planned. I also tried to ‘frost’ it with the cool whip and that didn’t work either. Thankfully Shane still thought it tasted awesome and ate it.

Meal Plan #19

Hey there! Happy Sunday! How was your weekend so far??

Doing anything special for your moms today? I was going to get flowers but because we leave Wednesday we would just have to throw them away, I did get her a small present though and we are going to get Froyo later (take your mom to froyo at Sweet Frog today and hers is free!). She also got a dozen Georgetown Cupcakes in the mail from the guy she is seeing and is a little annoyed by it. He sent 12 cupcakes for Valentine’s Day too and my mom isn’t big on sweets so a dozen cupcakes is a bit much, especially because we are (again) leaving in a few days. She’s the person that 95% of the time turns down dessert so she just isn’t sure why he is stuck on this idea of holiday cupcakes. It IS the thought that counts but she doesn’t want him to waste his money on all these dang cupcakes! Anyone in Annapolis want some?? ๐Ÿ™‚

Well anyways back to Sunday Meal prep- Are you a big meal planner/prep-ster? We are, at least I try to be ๐Ÿ™‚ This week, because we are going to New Orleans on Wednesday, we are focused on finishing up what needs to be eaten in the fridge! We hate wasting food! So not much grocery shopping was done this weekend but we did have veggies leftover from last week and we picked up a few items to last us the next couple days.

This is what we have:

Breakfasts: smoothies, greek yogurt with granola and berries, berry bowls

workout snacks: 1/2-full protein bar, coffee protein shake (I use 1 scoop mocha protein powder and then Starbucks cold brew coffee from the grocery store in a blender bottle), trail mix (usually before with dark chocolate espresso beans)

Lunches: Leftovers, Eggs and veggies, Whole Foods hot bar

Snacks: trail mix, plantains and cashew butter/almond butter, fresh berries

Dinners:

Salad with fresh sea bass, extra veggies, and sweet potato
Coconut Ginger Baked Salmon with roast veggies
(Wednesday)- dinner in with family friends
(Thursday)- Rum house, fish tacos!!
(Friday)- Arnauds, fresh fish and veggies
(Saturday)- Red Fish Grill, again fish and veggies

Sweets: Yasso greek yogurt bars, dark chocolate, Yogurt Land
Sucre Macaroon Tree!! – It is 40 macaroons made into the Shape of a tree, I have always wanted one and this is the perfect occasion!

Basically a lot going on this week and a lot of food eaten out. We stay healthy (er) when we travel by at least eating breakfast in most days. When we get to our hotel, where we have a mini kitchen, we will pick up plain greek yogurt and bananas/berries to have in the morning. I will also pack all my own snacks from home so that I don’t eat junk between meals.

I was just guessing what I would get at dinner Fri/Sat nights too. I will order whatever I am in the mood for but usually I go for the fish of the day since I know it will be super fresh and usually well done! I am looking forward to my meals in New Orleans!

What I Ate Wednesday #66

Hello, happy Wednesday?! How is your week going? Recovering from Easter if you celebrate? We have SO MUCH chocolate and candy and baked stuff in our house right now, wayy too much! I have definitely eaten way too much sugar lately. I feel like I am not the only one though.

Well I am going to recap was eating food and sweets wise so hope you enjoy! I am now trying to cut back on sugar again but all the temptation around doesn’t help!

Lunch: Leftover Blue Apron components- japanese miso potatoes, cod, grapefruit, onion and avocado, sauteed kale, cashews and some bean salad

Snack: Fage greek yogurt, plantains and almond butter – confession, last weekend I TOTALLY forgot about my plantains in the oven and over cooked them but will not waste them!

Dinner: Salmon, butter lettuce, peppers, broccoli, Bok Choy, and sweet potato with coconut butter and cashew butter

Dessert: Caroline’s Cakes- so yummy! This one is a caramel carrot cake! plus some pretzel m&ms from an egg in my Easter basket.

Everything was so good. I am big on leftovers for lunch. I have had a busy week thus far and am exhausted so I am wrapping this WIAW up! Hope you have a great day!

WIAW #64 Favorite Foods

Hey there! How are you? Hopefully doing well!

So I failed to get a full day of eats this week. I am pretty all over the place in the afternoon and not everything is pretty as I am sure you understand so today I am telling you my favorite eats! If I had the perfect day this is what I would eat from breakfast to dinner ๐Ÿ™‚ Hopefully you enjoy!

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Breakfast: A berry bowl made of blueberries and strawberries with cashew milk, topped with greens powder, protein powder, granola and pumpkin seeds. Plus a side of plantains with nut butter.

Lunch: Chipotle! Always a good choice- lettuce, black beans, veggies, sofritas, salsa, and guac!ย IMG_3702

Snack: trail mix, I love trail mix, there has to be lots of cashews, some almonds and a form of chocolate ๐Ÿ™‚

Dinner: Sushi! My favorite! I love eel rolls and salmon avocado. Plus sweet potato fries and seaweed salad. = perfect meal!

Dessert: As you can probably guess that would be froyo! Always the perfect dessert!

That would be one of many days of perfect eats. I have a lot of favorite foods but these are some that came to mind while typing up this post! I hope you enjoyed seeing what I would eat on a perfect day because now I am craving sushi, chipotle and frozen yogurt ๐Ÿ™‚

Thanksgiving Foods Galore

Hey there, everyone excited it is Thanksgiving week! I am!! I need the break from classes to work on my final papers and such. Sounds like a blast right? but it’s gotta be done!

I am at least doing a couple fun things. I am seeing the Hunger Games: Mocking Jay Part 1 on Wednesday, doing a Turkey Trot 5 mile run Thursday morning, and going to a Thanksgving potluck at an old teammates house later in the day! So that means I need to bring a side dish! I am stopping myself from wanting to make #allthethings because I have a budget and a limited around of time but I will share some of my ideas/the recipes I have seen around the web and wanted to make.

This would be my ideal meal components if I had all the time and needed to cover all of Thanksgiving dinner and breakfast.

So basically I want to make everything! There are so many more recipes that looked good. My friend that is hanging out with me Wednesday and Thursday is gluten free (celiac but not extreme- she can be near it/touch it/etc but can’t consume it, doesn’t have big issues if stuff is cross contaminated either, which makes things a whole lot less stressful) so we are thinking we will make GF Dairy Free Sweet Potato Biscuits, Sweet Potato Casserole, and Paleo Pumpkin Pie ย with just a couple edits to the recipes. I am looking forward to baking and these yummy foods; I was informed there will be plenty of veggie dishes already so we did not need to cover that.

Last week the veggie club on campus was sampling some vegan/vegetarian Thanksgiving foods and it wasn’t bad. I’m not a tofurky convert but paired with some mashed sweet potatoes and vegan stuffing it wasn’t bad… the cornbread and pumpkin pies weren’t great though :/ Thanksgiving has never been all about the food for me though, ever since I stopped eating meat I’ve just made a simple salad, some fish, and had some rolls, mashed sweet poatoes, and of course a lot of pumpkin pie but my family doesn’t obsess over havings tons of food and overstuffing ourselves. I just enjoy the time spent relaxing together not doing anything. That will be the hardest part this year, even though I had friends I am spending the day with and having dinner with, it is not the same not to see family and Shane. That is what it should be about!

So I hope everyone reminds their friends and family or whoever you choose to spend your Thanksgiving day with that you love them and are thankful for them in your life! Food is always good at bringing people together so obviously enjoy that too but if you burn the bread or overcook the turkey it isn’t a day ruiner! I love myself some pumpkin pie but I would give it all up for just the company.
