What I Ate Wednesday #77

Hey there! Sorry I missed my meal planning post. I had a long and busy weekend and did not prep much. We grocery shopped and all but are just winging it with the stuff we bought. So far so good though.

So here is a recap of what I ate last Thursday… yeah the only day I have all the photos from! ops.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Breakfast: smoothie bowl with pumpkin seeds and granola on top IMG_1301

Lunch: Lentil and sweet potato stew with kale added in IMG_1299

Snacks: quest bar at work (yes sometimes I color at work when it is slow), and unpictured Annies Snickerdoodle bunnies, toasted coconut pieces, and pumpkin spice almondsIMG_1311

Dinner: Spagetti squash with garlic tomato sauce, red pepper, onion, beef less crumbles and kale IMG_1322

Dessert: brownie and ice cream! (+ vanilla espresso almond butter) I ate the entire batch of brownies by myself which is why I have been eating them for so long now. IMG_1295

What I Ate Wednesday #75

Hi there! Welcome to another edition of WIAW on Run for Berries. How are you doing today? I don’t have work today so it is a day of chores for me! andddd applying for jobs and calling some apartment complex’s in San Diego! But lets get into my Newport RI eats for today.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Breakfast: Pumpkin Spice Muscle Eggs, pumpkin cornbread, blueberries, and a white sweet potato with almond butter and coconut  + dark chocolate espresso beans and coffeeIMG_1252

Lunch: pumpkin overnight oats (since I forgot to eat them for breakfast) with blueberries on top and I was doing an afternoon workout so I didn’t want anything too heavy to eat IMG_1273

Snacks: TJ’s pumpkin O’s, Honey bunches of oats, blueberries, with cashew milk and pumpkin spice protein powder IMG_1275

Dinner: 3 types of squash! Butternut, buttercup and spagetti squash (with fake chicken stuff) plus cornbreadIMG_1265

Dessert: 2 Brownies with almond butter. Didn’t take a picture. & a few pieces of peppermint bark thins. So yummy!

So that is a wrap for WIAW but from Saturday! I am going to miss all my favorite varieties of squash once winter ends but will love the warmer temps, of course! Have a great Wednesday!

What I Ate Wednesday #72

Hey there! Did you catch my graduation recaps? Well I put a lot of my meals on there so you can check those out too 🙂 Today I am back at home and going to recap another normal day (Monday) I tried to get in some healthier eats than I did while away, minus a few macaroons I still enjoyed (so good)

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Pre Gym: coffee, trail mix with dark chocolate espresso beans, and pretzels with almond butter

Post gym: more pretzels with my chocolate coconut cashew butter & a dark chocolate mocha kind bar.

Lunch: Smoothie in a bowl- I had to drink some before I could put my toppings on otherwise the bowl was going to overflow! With kashi cereal, coconut, and extra blueberries. It was a whole banana, 1/2 cup blueberries, 2-3 cups of kale, tart cherry juice, plain greek yogurt, pb2 and green powder.

Snacks: plantain chips with peanut butter, lots of blueberries (while chatting with kiddos so no photos)

Dinner: Cajun spice salmon, big salads with extra veggies

Dessert: a salted caramel macaroon and a salted caramel yasso greek yogurt bar.

Well that was my first day back in MD with a normal work day! Once we run out of macaroons we are definitely trying to cut back on sweets a little bit! My stomach isn’t too happy with me! :/ I hope you enjoyed my eats anyways!

What I Ate Wednesday #71

Hey there! So I missed the last two days and I am getting this typed up pretty late too! I had plans to call it an early night but forgot about WIAW and a long list of other things I need/want to do before I leave! Ahhhh. I feel so behind.

I am on my way to New Orleans or in NOLA by the time you are reading this! CRAZY. Lots of plans and a busy week ahead of me! So lets cut to the chase and look at what I ate yesterday.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Pre gym: trail mix & coffee – wasn’t too hungry this morning so I just threw together a small snack bag of trail mix (with chocolate espresso beans, of course) and headed out the door.

Post Gym: 1/2 detour bar & another coffee (Free coffee all month at Panera!) – I had a chiro appt so I wanted to eat something since I went to Bodypump and I still had 1/2 of this in my bag.

Breakfast: BIG banana/blueberry PB smoothie (that is pb2 on top, plus I added some granola halfway through) with Kale and plantains with chocolate coconut cashew butter

Lunch: Baked Sweet Potato with almond butter, granola, chocolate chips. Lots of trail mix. Lots of blueberries. Some of the Salad I made for the family I nanny for dinner. Yes all super random but my breakfast was late because of my chiro appt and then I had work and was driving the kids all the way across town and then I had to make them dinner soooo it happens!

 Dinner: Stir fry with Sea Bass and avocado.

Dessert:  Yasso Salted Caramel Greek Yogurt bar broken up on top of two Georgetown cupcake halves (salted caramel and chocolate fudge)

Sooooo basically my eats, in my eyes, yesterday were AWESOME! Haha. So I am glad a got them up 🙂 I hope you enjoyed checking them out too.

I have one more picture to share with you. Incase you wanted to laugh at me- I had a pinterest cake fail this weekend. I wanted to make Shane a Banana Pudding Poke Cake. Butttt I didn’t want to just make a sheet style cake; I decided to make a two layer circle cake but unfortunately it didn’t turn out as great as planned. I also tried to ‘frost’ it with the cool whip and that didn’t work either. Thankfully Shane still thought it tasted awesome and ate it.

What I Ate Wednesday #70

Hey there! I cannot believe I have done 70 of these! Wow. They are my favorite day of the week though 🙂 maybe I am just nosy but I like to see what everyone is eating!  I do not think I am alone in that either!

Pre gym: Baked plantains with almond butter, dark chocolate espresso beans and trail mix, and always coffee

Lunch:  Smoothie in a bowl! Kale, blueberries, strawberries, plain kefir, cashew milk, pb2 with granola, coconut, pumpkin seeds, and some extra peanut butter protein powder + zucchini bread with almond butter.

Snack: Chocolate Salted Caramel Luna protein bar! So good! I saw these come out a few weeks ago but didn’t want to buy a whole box before trying one (aka Target only had boxes) but then I was at Giant this weekend and saw them sold individually! (I ate it before the picture, ops)

So that is what my Monday looked like this week! A pretty typical day in my life 🙂 I love my smoothies now that is it warm out and since I didn’t get it for breakfast I really craved it for lunch! The zucchini bread I was eating is from Fresh Market too and it is soooo good, I only buy it occasionally!

What I Ate Wednesday #69 Race Day!

Hi! How are you today? Doing well I hope. I am here today for WIAW with Jen and am going to share what I ate on Saturday aka my most recent race day.

It wasn’t a very competitive race and I wasn’t going after any times or goals with I still thought it would be a fun day to share. Plus I spent the least amount of time in the car on Saturday so I didn’t just eat snacks/junk all day like some of the other days lately have been :/ ops. It happens and not too often that it is a problem.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Pre Race: Coffee, some dark chocolate espresso beans. It was an early race so I slept as late as I could and never eat before races. It works for me I have had problems in the past when actually eating breakfast before morning races… not fun.

Post Race/Breakfast: First was a banana from the snack bags we got at the end of the race then I had packed a PB&J Greek Yogurt (pretty good), granola, and blueberries plus more coffee, and a bag of trail mix

Lunch: At Au Bon Pan, I had Coconut Thai (Seafood) Curry and a Tuna Garden Salad

Snacks: Broccoli, Pita chips and hummus while making dinner

Dinner: Shrimp with sautéed Kale, cooked tomatoes, avocado and a sweet potato with pb and granola

Dessert:Red Mango Frozen Yogurt eaten while watching Birdman (weird movie) so no photo

So that was my day of Saturday. I missed meal planning this week because we were away and had no groceries when we got home on Monday and no idea what we were going to do.  We are just winging it 🙂 It happens and my mom did the shopping while I was at work on Monday afternoon. Changing it up a bit!

What I Ate Wednesday #68

Hey there good people. How are you today? I am doing pretty well, in a rush to get packed making sure I don’t forget anything and most likely over packing.

Well I am driving so it is okay to over pack, right? 🙂 Too bad driving isn’t great for the environment, since it is EARTH DAY and all, but we live in a society where we cannot avoid that evil. I do try to walk or bike whenever I can; that was a lot easier in New Orleans though! I biked daily and only used my car once a week or so.

Today I am recapping my eats from Sunday. Hope you enjoy!

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Pre Breakfast: LOTS of coffee- I had a cup on my way to Target to wait with my mom and then her BF brought venti Starbucks for us before we got in. Plus some dark chocolate espresso beans and almonds.

Breakfast: Smoothie the size of my head (the bowl is huge)- kale, blueberries, strawberries, pb2, cashew milk, extra berries, and granola/coconut

Lunch: Sauteed Kale, eggs, onion, shrimp and salsa

Snacks: My salted caramel donut I bought Saturday and a couple handfuls of the Boom Chicka Bites and some cashews

Dinner: plate of ‘beef’ (not really beef) crumbles, hummus, guacamole, carrots, cucumbers plus purple sweet potato with coconut and cashew butter and granola

Dessert: a coffee chocolate chip frozen greek yogurt bar

IMG_4332Basically that was my day! The greek yogurt bars are so good! I had the largest purple sweet potato like 10 inches long so I had some of it in tupperware and just added the toppings and ate it out of that. Life, right?  Now I am off to pack snacks to take with me to Penn Relays and probably eat some of them in the process 🙂

Hello, Hello. I cannot believe I have already done so many of these WIAW posts, but really they are my favorite! I love seeing what everyone else eats to get some new ideas! I hope you enjoy reading mine too! They are fun to type up and post (when you remember to take pictures). So here is what I ate last Saturday.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Pre yoga/gym: Coffee, dark chocolate espresso beans, cashews and almonds. (same as always)

Breakfast: Smoothie in a Bowl- blueberries, banana, kale, cashew milk, kefir, green powder, peanut butter protein powder topped with kashi cereal, more blueberries, granola, and coconut

Dinner: Salad with a broken up veggie burger, hard boiled egg, avocado, salsa and while I was putting dinner together for myself and the kids I snacked on carrots and hummus.

Dessert: Dark Chocolate covered Almonds and frosted sugar cookie   kettle corn (yum!). Parents were out until after midnight so lots of snacking happened while I watched Bridesmaids and roamed the internet.

What I Ate Wednesday #66

Hello, happy Wednesday?! How is your week going? Recovering from Easter if you celebrate? We have SO MUCH chocolate and candy and baked stuff in our house right now, wayy too much! I have definitely eaten way too much sugar lately. I feel like I am not the only one though.

Well I am going to recap was eating food and sweets wise so hope you enjoy! I am now trying to cut back on sugar again but all the temptation around doesn’t help!

Snack: Fage greek yogurt, plantains and almond butter – confession, last weekend I TOTALLY forgot about my plantains in the oven and over cooked them but will not waste them!

Hello, Hello! I am checking in today for WIAW, my favorite day of the week! I got all my food from Sunday, it wasn’t the most exciting day but everything was yummy! I was eating in Sunday to prepare for my friend to visit (he got here last night) and eating out a lot during his stay. So here we go! WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS Pre gym: Coffee, nuts, espresso beans IMG_4279 Breakfast: Green smoothie with granola and pumpkin seeds, banana bread with cashew butter and extra berries. IMG_4281 Lunch: Blueberries and strawberries with cashew milk, green powder, pb2, and granola plus some melon and more banana bread with cashew butter. (pretty random but I wasn’t very hungry)
